I installed "slatwall" panels where i wanted guitar hangers. These are 4x8 panels used for store displays. They have a groove that display brackets clip into. You can get guitar hangers that clip into slatwall from many different suppliers such as "String Swing", "Gruven", etc. You can cut the panels to any size you need. For example you could cut it down to 16" wide panels and install them along the ceiling in your guitar room and you would be able to hang instruments an any wall you desire. Slatwall is available in white, wood grains, mirror, etc. White is the cheapest and can be painted any color.

The remaining Surfaces I used particle board covered with commercial carpeting. I used 5/8" thick particle board which is the same thickness as the Slatwall. It is cheap and extremely heavy/dense. It will help to prevent any rattles or resonance. Make sure you attach with deck screws. It wouldn't hurt to also glue it to the frame with Durabond wood glue.
Commercial carpeting is very thin and often used as a covering on speakers and equipment racks. You can attach it to the walls with contact cement. Just make sure you have plenty of ventilation when using contact cement. The carpeting will help to kill reflections and echos that can make a music room sound awful. You can also install Sonex panels where you think you need them and build some bass traps.

The last thing you want in a music room is hard reflective surfaces like wood paneling. The only good thing I can say about wood paneling is that it's cheap.

If you want cedar on some surfaces, use tongue-n-groove boards. You can install them vertically, horizontally, or on a 45" angle.
